What about steel?
D2 is American tool steel developed for industry and mechanical engineering. Its positive characteristics are high hardness, corrosion resistance, edge-holding, and good viscosity. D2 steel does not belong to the class of stainless steel, but it is called "Almost-stainless" for its high (about 12%) chromium content. Of the class of high-carbon steels, D2 is the most resistant to corrosion. A knife made of this steel will require simple care - after use, wash and wipe.
At the same time, the carbon content in steel is 1.4-1.6%, which makes the cut aggressive, but the product will keep a cutting edge for a long time even with active use. Steel is resistant to the environment and does not deform, tolerates even high temperatures. The hardness contributes to a good resistance to wear, which allows you to use the blade to work with a variety of materials, including high-strength materials, e.g. small bones.
